On Assignment in Kazakhstan
Volunteer Advisor Bryan Fordham is on assignment in Kazakhstan. Read about some of his experiences in Kazakhstan.
1) I understand you have done over 70 assignments with CESO. What motivates you about volunteering with CESO?
My wife and I have had a good life. If life treats you well, then you should give back if the opportunity presents itself. I read an article in a Chef’s magazine about becoming a CESO volunteer. So I applied and was accepted in 2001. My first assignment was in Moldova, Eastern Europe that same year.
2) Tell us a little about your assignments in Kazakhstan?
Although I am a certified Executive Chef, I seem to have more requests for baking and pastry making. I am at present on two assignments with bakeries in the Kostanay region which is north of Astana in Kazakhstan. They are interested in learning about European breads and pastries. Some of the recipes I have introduced are Black Bread and Boston Brown Bread.
3) What has been the best part about your time in Kazakhstan?
I believe the best part about being here is Kazakhstan is the people. I was invited to a family dinner and was fed traditional cuisine which included horse meat. Horse meat and goat meat are used frequently in the north of Kazakhstan. The hospitality comes from their nomadic past.
4) Tell us about a memorable moment or experience from Kazakhstan that stands out for you.
I visited a high school and was charmed by the courtesy of the young people. As with many ancient cultures, the elderly are respected for their knowledge and wisdom. Entering a classroom, the children would all stand up. There were many photos taken that day. Most have never met an “Executive Chef” before. My Chef’s uniform proudly shows the Canadian flag.
5) Is there any advice you would give to other Volunteer Advisors going to Kazakhstan on assignment?
As always, being patient with your clients and colleagues is a virtue. Expect to repeat everything twice and leave at home any negative comments on culture and religion. They will give you everything they have and expect nothing in return. The best gift you can give them is to teach and advise them 110%.
